Queen of Dong Ding sweetness!

The tea comes from one of the highest gardens on Fenghuang Mountain, where the bushes grow at an altitude of 850 meters above sea level. The garden covers a steep slope, so moving between the bushes requires great caution.

Mr. Chen, whose name is in the name of the tea, is the owner of the garden. He cultivates the bushes in a sustainable manner. It is not a certified organic garden, but in annual tests for residues of nearly 500 pesticides, the tea shows none of them!

Our friend Nantou “rents” part of the garden for the harvest and production and supervises both processes himself according to his idea for a given tea.

Another Dong Ding oolong in the offer… but different, because the quite strong oxidation of the leaves is combined with light roasting over longan charcoal. The roasting lasted as long as 30 hours, carried out in several rounds and at fairly low temperatures. All this to create a tea with a fresh and floral-fruity profile, with buttery, honey and cookie notes.

The aroma and taste also feature sweet notes of pineapple, peaches, nectarines, and roasted grains. There is something unusual in this tea – something difficult to put into words – which I call herbal grassiness.

Tea cultivar Qing Xin oolong

Roasting: light charcoal roasted – 2 times (2×4 hours) Temperature of roasting: from 70 to 95 C.

Temperature of water and amount of leaves: 100 C 6-8g/100ml.

Suggested brewing method: Yixing clay teapot or gaiwan of low capacity. First, you should pre-heat empty teapot/gaiwan and tea cups with boiling water. When the teapot is warmed, then you put the tea leaves in. After smelling hot and dry leaves in the pot, gently pour the boiling water to the pot.  First infusion should be very short- not more than 30-40 second. We suggest to increase brewing time for 5-10 seconds in each next brewing. You can prepare at least 8-10 nice brewings!
