Now… something completely different if you had a chance to taste previous vintages of our Tian Xin Yan Shui Xian.

In 2020 we decided to order medium roasted Shui Xian to show you flowery side of this cultivar. The tea comes from the same trees like 2016-2019 vintages but the roasting level is slightly lower.

When tasting Tian Xin Yan Shui Xian you will notice excellent strong mineral notes typical for good yancha combined with sweet flowery nuances and notes of wood, moss, incense and honey.

Excellent balance and enjoyable multi layered taste profile.

Description

 

Temperature of water and amount of leaves: 100 C 5g/100ml.
Suggested brewing method: Yixing clay teapot or gaiwan of low capacity. First, you should pre-heat empty teapot/gaiwan and tea cups with boiling water. When the teapot is warmed, then you put the tea leaves in. After smelling hot and dry leaves in the pot, gently pour the boiling water to the pot.  First infusion should be very short- not more than 10 second. We suggest to increase brewing time for 5-10 seconds in each next brewing.
