Some teas are hard to describe because experiencing them seems to be beyond the words we know.

2023 Shan Lin Xi Wild Garden Charcoal Roasted Oolong is the tea exclusively produced for us. It comes from wild, abandoned garden located on the slopes of Shan Lin Xi.

This garden is a small, beautiful ecosystem – with bird’s nests in the bushes, spider webs and lots of flying insects flying around freely. With no risk from pesticides or herbicides.

Garden like this is something we need to understand because here almost all younger leaves are instantly eaten by the bugs so the tea can by only made from the strongest, older leaves that are hard enough to fight with bugs.

We visited this garden in 2019 and 2023. All annual crop is less than 60kg (spring and winter in total).

Maker we work with produces only organic, wild high mountain style oolong with no roasting.

But we talked a lot with our friend to make special tea for us using the leaves from wild garden. So we have! Traditionally  roasted over longan charcoal oolong made from exquisite leaves. It was smooth and delicate roasting – it lasted only 8hours in total.

As a result we bring you the sublime, balanced and sweet tea which delights you with its smoothness and fruity, buttery and honey like notes. Aftertaste is clean and lasts for hours.

Description

Origin:  Abandoned organic garden, Shan Lin Xi, Nantou county, Taiwan,

Harvest: spring 2023

Cultivar/Tree Variety:  Qing Xin

Temperature of water and amount of leaves: 100 C 5-7g/100ml.

Suggested brewing method: Yixing clay teapot or gaiwan of low capacity. First, you should pre-heat empty teapot/gaiwan and tea cups with boiling water. When the teapot is warmed, then you put the tea leaves in. After smelling hot and dry leaves in the pot, gently pour the boiling water to the pot.  First infusion should be very short- not more than 40-50 second. Second infusion should be little bit shorter than first one cause the leaves are more open then. We suggest to increase brewing time for 5-10 seconds in third and each next brewing.
