This tea is nostalgic journey in time. Like real proust’s madeleine.

For long years we have been searching for traditional, charcoal roasted teas from Anxi that can meet our standards – both in terms of taste/ aroma but also in terms of pesticides residues.

We did it! Now you can enjoy organic, pure Tie Guan Yin (made from Hong Xin Wai Wei Tao bush)  made in really old style. Roasting over longan wood, rolling technique and high oxidation are key features of old school Anxi Oolongs. This tea is similar to oolongs produced there 50 and more years ago!

Taste profile: fried stone fruit jam, resinous, fruity notes of ripe exotic fruits, autumnal honey, echoes of flowers in further infusions.

Please look at the shape of the leaves – they are rolled in shape of “shrimp” or “frog leg”!

Description

Origin:  organic garden in Anxi, Fujian, China

Harvest: spring 2023

Cultivar/Tree Variety:  Tie Guan Yin

Temperature of water and amount of leaves: 100 C 5-6g/100ml.

Suggested brewing method: Yixing clay teapot or gaiwan of low capacity. First, you should pre-heat empty teapot/gaiwan and tea cups with boiling water. When the teapot is warmed, then you put the tea leaves in. After smelling hot and dry leaves in the pot, gently pour the boiling water to the pot.  First infusion should be short- not more than 20-30 second. We suggest to increase brewing time for 15-20 seconds in each next brewing.
