Liu An Hei Cha – dark tea from Liu An. A young, fresh one.
This variety is a high-quality dark tea produced from leaves of the premium ‘Mao Jian’ grade.
It does not originate from the oldest, traditional production area of Liu An Hei Cha, but the tea bushes used are grown without pesticides or herbicides.
During production, this tea is pressed into small bamboo baskets and roasted over a gentle fire. As it ages, Hei Cha matures in a similar way to pu-erh teas; however, this process is slower, and slow fermentation is possible under suitable storage conditions in a fairly humid environment (Taiwan, Hong Kong, Malaysia).
Flavour profile: the tea is somewhat reminiscent of sheng pu-erh that is several years old, with distinct notes of fresh tobacco, honey, wood and herbs, and hints of rustic green tea.

Tea cultivar local small-leaf varietal (Qi Men Zhu Ye Zhong 祁门槠叶种)
Temperature of water and amount of leaves: 100 C 4-5g/100ml.
Suggested brewing method: Yixing clay teapot or gaiwan of low capacity. First, you should pre-heat empty teapot/gaiwan and tea cups with boiling water. When the teapot is warmed, then you put the tea leaves in. After smelling hot and dry leaves in the pot, rinse the tea for 10-15 seconds using boiling water and afterwards pour out all the water from your pot. First 2-3 infusions should be very short- not more than 10 second. We suggest to increase brewing time for 5-10 seconds in each next brewing.
