Organic kabusecha (shaded tea) from Mr Haruki O-ishi of Miyazaki Prefecture.
Haruki O-ishi’s organic tea farm is located in Miyakonojo, in the south of Miyazaki Prefecture.
Thanks to his dedication and professionalism, Haruki produces high-quality tea in small quantities, including rare regional cultivars.
Tea production has a long tradition in the Ō-ishi family. As a result of the global economic crisis, Haruki’s great-grandparents moved from the tea-growing region of Shizuoka to Miyazaki, where they established their own tea garden. After training at the Shizuoka Tea Research Institute, Haruki Ō-ishi took over the business and, in 2016, converted it entirely to organic farming, motivated by a desire to produce safe food for his children. Thanks to close collaboration with the Miyazaki Tea Research Institute, he is constantly introducing new varieties to his plantation. His work combines precise craftsmanship, a spirit of innovation and a deep respect for nature and tradition.
And now about the tea itself:
Kabusecha produced in the tsuyo-mushi style – with long/strong steaming during processing . As a result, the leaves have a more damaged structure, making the infusion dense, viscous and distinctly oily in texture. The first infusion is jade-coloured, whilst subsequent infusions, noticeably thicker, reveal a bright, vivid green hue.
Flavour profile: vegetable stock, flowers, cream, very well pronounced umami. The aroma is dominated by buttery and floral notes.
The tea is full-bodied, very sweet and smooth, with relatively low bitterness.

Harvest: ichibancha, first flush 2025
Cultivar: 100% Asanoka (registered in 1996. It is crossbreed or Yabukita and Chinese Ping Shui No.1 (平水1号)
Temperature of water and amount of leaves: 60-65. C. First infusion should be like 50 sec to 1:30 min. 2nd and 3rd, please do very short, not longer than 20 sec. In traditional brewing method you can easily use like 5-6g for 100 ml teapot. For more casual brewing 7g for 250 ml is fine.
