Most of the teas produced in Ali Shan area are very lightly oxidized and flowery oolongs.
But this one is completely different! Here you can admire medium oxidation and amazing charcoal roasting done with longan tree charcoal.
The garden, situated at an altitude of 1,400 metres above sea level, covers a steep mountain slope that ends in a cliff, beneath which a mountain river flows.
The garden’s owner, Mr Ye, does not use pesticides or herbicides.
The roasting process was carried out for us by our friend from Nantou – an expert in traditional methods of roasting oolong teas.
Taste profile: incense, sandalwood, campfire, coconut, well-baked bread, nuts, burnt jam, caramel, cane sugar, chocolate.

Origin: 1400 meters above sea level, Ruifeng, Ali Shan, Jiayi county (Chiayi), Taiwan
Harvest: Spring 2026
Varietal: Qing Xin (Chin Shin)
Roasting: strong, traditional charcoal roasting
Temperature of water and amount of leaves: 100 C 5-6g/100ml.
Suggested brewing method: Yixing clay teapot or gaiwan of low capacity. First, you should pre-heat empty teapot/gaiwan and tea cups with boiling water. When the teapot is warmed, then you put the tea leaves in. After smelling hot and dry leaves in the pot, gently pour the boiling water to the pot. First infusion should be very short- not more than 30-40 seconds. 2nd infusion, when leaves are already open: 25 sec. Then we suggest to increase brewing time for 5-10 seconds in each next brewing. You can prepare at least 8 nice brewings!
