A unique organic shincha from the Hayashi family!

The leaves from the Yabukita bushes come from a small plot surrounded by forest.

After harvesting, the leaves underwent an 18-hour overnight withering process, which is more commonly associated with oolong teas.

This process has created some very interesting spring-like, floral notes in the tea, which I found particularly appealing.

Tea style: asamushi – lightly/shortly steamed leaves.

A very well-balanced, delicate shincha with a floral and sweet flavour profile. Delicate umami and a pleasant, thick consistency to the infusion.

One cannot help but feel that this tea tastes just like the pure mountain air breathed in on a green, forested hillside.

Description

Origin: Kirishima, Kagoshima prefecture, Japan.

Harvest: ichibancha, first flush 2026

Cultivar: 100% yabukita

Temperature of water and amount of leaves: 65-70. C. First infusion should be like 50 sec to 1:30 min. 2nd and 3rd, please do very short, not longer than 20 sec. In traditional brewing method you can easily use like 5-6g for 100 ml teapot. For more casual brewing 7g for 250 ml is fine.
