KOU-UN literally means “cloud of fragrance”, and figuratively “full flower looking like clouds”. It becomes clear that fragrance plays an important role in Houjicha, roasted tea. A crucial peculiarity of KOU-UN; however, is that it is made from the shaded tea (Kabusecha) of the first harvest, which makes the tea rare treat.

Tea was produced in organic and ecological garden owned by Watanabe Family. Garden is located in Yakushima Island, protected under UNESCO program since 1993.

Taste profile: popcorn, hazelnuts, caramel, honey, little bit of pleasant juicy umami.

Amazing tea with warm, easygoing character.

Havrest: ichibancha, first flush 2025

Cultivar: 100% Kanaya Midori

Temperature of water and amount of leaves: 70-90. C. (please experiment with water temperature to find the best taste for you!) First infusion should be like 20-30 sec to 50 sec. 2nd and 3rd, please do very short, not longer than 20 sec.  Brewing ratio: 6g for 250 ml is fine.
