Leaves come from Xin Yi Indigenous Mountain Township, the homeland of aboriginal Bunun people. Bushes grow in organic garden with view on Yu Shan mountain range.

Fresh leaves were processed in small factory in Yuchi.

Hong Yun is an exclusive Taiwanese tea cultivar that was developed by the Taiwanese Tea Research and Extension Station in 2008. It’s a hybrid of Chinese Qimen and Napalese assamica from Kyang area.

When you see Hong Yun in the market, it’s usually the most expensive black tea.

Why? Not many farmers decided to grow this bush but it’s also low-yielding, bringing quite small crop comparing to other famous bushes like Qing Xin.

Amazing black tea with strong, powerful body and unique taste/aroma profile.

Strong notes of orange peel, ripe grapefruit, some menthol and herbal notes.

And wild honey.

Description

Origin: 600 m. above sea level, Xin Yi Mountain Indigenous Township, Nantou, Tajwan. (tea leaves processed in Yuchi, Nantou)

Harvest: January 2023

Cultivar/Tree Variety:  Hong Yun aka. Red Rhyme  / TTES.21

Temperature of water and amount of leaves: 85-90 C 5-6g/100ml.

Suggested brewing method: Yixing clay teapot or gaiwan of low capacity. First, you should pre-heat empty teapot/gaiwan and tea cups with boiling water. When the teapot is warmed, then you put the tea leaves in. After smelling hot and dry leaves in the pot, gently pour the boiling water to the pot.  First infusion should be very short- not more than 15-35 second. We suggest to increase brewing time for 5-10 seconds in each next brewing.

We recommend to brew this tea also in the bowl-style- then please use around 1,5g of leaves for 100ml of water.
